Plum Tart with Jello -Yummy Summer Dessert

Hello Ladies and Gentlemen,

I wanted to start my first post with a delicious recipe. It is tasty, light and perfect for the hot summer days when you and the kids are in need of a sweet treat!

So here it goes…

For the tart dough you will need:

1 tbs icing sugar

180 gr unsalted butter

1.5 cup plain flour

1 egg yolk

2 tbs cold water

For the filling:

1 cup plum marmalade (or any other marmalade)

1 packet of black cherry jello ( or any other jello)

First of all you will need to make the tart base.

Put the butter and the flour in a bowl and mix them until they become crumbly. Then add the egg, icing sugar and cold water into the crumbly mixture.

Then kneed them all until they become soft and less sticky. If its too sticky add a little bit more flour and make the dough into a ball. Put it in the fridge for 10 minutes.

Heat you oven to 180 C.  After 10 minutes take the dough out of the fridge and roll it so that it  will fit in a  tart tray. Put the dough in the tray and put grease paper on top of the dough. Put 2 cups of beans on top of it so that the dough won’t rise when its cooking.

Cook the tart base for about 20 minutes then take out the beans and cook for further 10 minutes until the dough is crispy and has a yellow tone. When its done let it cool before putting in the filling.

For the Filling:

Make the Jello as described on the package – ( put the jello powder in water )- set it a side.

Put the marmalade into the cooled tart base. Then carefully put the jello on top of the marmalade. You can decorate it as you wish with fresh fruit I chose to put a couple of grapes on top of it.

Lastly put the tart into the freezer for 30 minutes.

And Voila! A tasty summer delight!
