RED VELVET CAKE WITH COCONUT

INGREDIENTS

1 and 1/ 2  cups  all purpose flour

1 tbsp melted ,unsalted butter

1 tsp cocoa powder

1 tbsp vegetable  oil

1 tsp baking soda

2 eggs

2 tbsp icing-sugar

1/4 tsp red food coloring  with 1 tbs water

1 cup coconut for coated

1 cup buttermilk or yogurt

80gr.white chocolate, melted

1 tsp vanilla extract

FOR THE FROSTING

400 gr cream cheese

1/2 tbsp unsalted butter, softened

3 tbsp icing sugar

80gr.white chocolate, melted

1 tsp finely grated lemon rind

1/2 tsp vanilla extract

DIRECTIONS

1- Whisk  the eggs and icing sugar  until fluffy and whitened with electric mixer , then add  buttermilk or yogurt ,lemon juice , vanilla extract  and  stir them gently and add  the flour ,baking soda  ,melted white chocolate ,cocoa , mix them gently again.Add the food coloring and  place it a cake pan ( cake pan lined the bottom  with a parchment paper.)

2- Place  the cake pan ,preheat the oven 180 degree C .

3-Bake it and let cool and then using the long knife , cut thin slice , for 4 equal slices. Whisk all of the frosting ingredients until fluffy and creamy.

4-Cover each cake slices with the frosting and Cover the top and sides whit
the thin frosting and place refrigerator for 15 minutes ,then cover again
the frosting and cover on the top coconut .Let a rest it in the refrigerator
for 1 hour and then serve it .
