2 kg sour cherry , rinse the cherries and remove the stems using the hands or cherry pitter .
6 Cup sugar 1/2 Lemon juice 1 Cup water
DIRECTIONS : Put the cherries and sugar in a large pot ,cover the pot and set a side about 3 hour or more .
Then add 1 cup water and cook the cherries to medium heat until sugar has dissolved 5 minutes . Simmer it until cherry juice bubble up .
Place a strainer above a large bowl .Then remove the cherries from the cherry juice with heatproof spatula .
Put the cherries in the strainer . Pour the strained cherry juice in the pot from the bowl .
Stirring frequently it and simmer it until a bit thick and looks like it is beginning to thick .
Test it ,put a little jam in a small plate ,let it cool and if it is like thick soup, you put cherries in pot again , stir it 5 minutes and add lemon juice ,it will help the jam to become thick .
Test it again, it is thickening or it is not .
The jam is cooked remove the pot from heat . Let it cool .Then place the cherry jam in a dry jar .
