Fried rice with Anchovy is so delicious, simple and healthy. I wanted to share this recipe with you.
Anchovies are small fish and Anchovies are rich in protein. They are a rich source of selenium which is extremely heart-friendly mineral. Anchovy contains calcium,iron, potassium, zinc, folate. Anchovies are good source vitamin A, E, D, and vitamin B12, B6, K.
350 gr. anchovies ; clean and remove the head and bones.
1 cup rice
1 clove garlic, smashed
2 tbs butter
5 tbs olive oil
3 tbs frozen corn
1 tbs rosemary ,chopped
1 tbs lemon juice
Sea salt to taste
Water for boiling the rice, approximately 2 liter
1- Boil the water in a large pan and add 1 tbs sea salt .
2 – Add the rice and simmer it until rare done . Strain it with a strainer and transfer to in a bowl , set a side.
3 – Put the olive oil and butter in a small pan . Heat and melt them and add the garlic, cook it until yellowish .
4 – Then pour the cooked garlic into the bowl , mix it with the rice ,add herbs ,lemon juice and combine them together .Line the bottom of the pan with a parchment paper and spray it with olive oil.
5 – Place side by side the anchovies in the pan .Place the rice upon the anchovies and press with a spoon on the rice . Then cover the baking tray with a parchment paper . Bake it in a preheated oven at 250ºC. for about 20-25 minutes and remove it from the oven and turn upside down the pan on a serving plate carefully, transfer to the service plate and serve immediately .
Simmer the rice until rare-done.
Remove the head and bones.
