STUFFED EGGPLANT ( KARNIYARIK )

Stuffed eggplant  is  taste and health meal for lunch  or dinner . Step by step ,how to make it .

INGREDIENTS :

200 gr. ground beef

3 eggplants , medium size

1 onion ,chopped

2 cloves garlic ,chopped

1 big tomato ,chopped

2 tbsp  olive oil

1 tbsp  butter

1/2 tsp salt

1/4 tsp  black pepper

1/4  tsp  red  peper flakes

1/2 tbsp  tomato paste

1 cup water with 1 tbs tomato paste

1 tbsp  parsley ,chopped

1 cup sun flower oil

DIRECTIONS :

Peel in strips of the eggplants .Split the eggplants ,lengthways , leaving both ends uncut .Wash them and dry.

Put the sunflower oil in a shallow saucepan .Heat it on a high heat , place the eggplant in the saucepan . Sauté  them until golden brown and transfer them onto a paper towel , set aside .

FOR STUFFING DIRECTIONS :

Sauté the ground meat with the olive oil and butter  in a saucepan  over  the medium heat . Then add onion , fresh green pepper ,garlic , salt  and stir them .Cook until they are golden brown . Add tomato and tomato paste  ,parsley , black pepper , red pepper flakes  .Cook for 10 minutes .Remove from the heat .

Stuff the eggplants with this mixture , place in a pan . Mix 1 cup water with 1 tbs tomato paste . Pour  this mixture in the pan .Cover  and cook  on the medium heat  about  20- 30 minutes until the eggplants are tender .

Transfer gently to a serving plate .
