Hey everyone! Today I made this yummy chicken for my family for dinner. Its has the perfect combination of herbs and flavours You can serve it with vegetables or fries and it is something everybody will enjoy!

1 whole chicken
1 and half tsp sea salt
1 tbs fresh thyme , chopped
1 tbs fresh mint , chopped
1 tbs butter
1 tsp chili pepper
1/2 tsp black pepper
3 cloves garlic , minced
1 tbs olive oil
FOR PREPARE DIRECTIONS :
Remove your chicken giblets then wash the chicken and drain . Cut your chicken wings from the chicken breast . Lay your chicken open , like a book and flatten the chicken with firm pressure .
In a small bowl combine the garlic ,mint ,basil , thyme , salt , chili pepper ,black pepper and butter . Using your fingerstip and work your way under the skin of the chicken to separate the skin from the breast to the chicken legs and develop a pocket .
Then smear the mixed ingredients under the skin . Cover it with cling-film and let a rest at least 30 minutes .
FOR COOKING DIRECTIONS :
Put the olive oil in a large skillet and heat it . Place the chicken skin side down and place a flat plate and a stone ( for heavy ) or another heavy something . Pressing it down firmly to get maximum skin contact with the hot skillet .
Sear until golden brown about 3 minutes over a hight heat . When the skin has golden color , turn it over and sear another side . Place the chicken on a sheeted tray,Pour the remaining oil on the chicken.
Then place the chicken in a preheated oven ( 220 degrees .) Cook it for 30 minutes . You can get crispy skin and juicy in your chicken .Let to rest for 5 minutes .
Serve it with sweet and sour sauce .
