2 sea bass fillets ( 700- 800 gr. )
2 tbs olive oil for frying sea bass
Salt and black pepper
400 gr. leaf beet or spinach leaves
2 tbs pine kernel
1 clove , chopped
2 tbs olive oil and 1 tbs butter for leaf beet
2 tbs heavy cream
FOR SAUCE INGREDIENTS:
1 tbs butter , melted
1 tbs lemon juice
Mix them and set aside .
FOR LEAF BEET OR SPINACH LEAVES DIRECTIONS :
Put the butter and olive oil in a large pan . Heat it and add pine kernel cook until
yellows , add the garlic and cook until golden yellow . Place leaf beet in the pan and stir together
until the leaf beet has wilted .Remove the pan from the heat and stir in the cream .Taste and season
with pepper and salt
FOR SEA BASS DIRECTIONS :
Heat 2 tbs olive oil in a non-stick pan on a high heat . Place the skin side of the sea bass in the pan .
Cook a nice golden color turn the heat down to medium and cook 2 minutes and carefully turning over it .
Cook it and take the sea bass from the pan add the sauce 1 tbs on it .
Place the wilted leaf beet or spinach leaves in the centre of plate and put the sea bass
fillets on top . Serve it .
