Hello lovelies. Word of the day is for me is “healthy”. With all the desserts and pastries I’ve been cooking I thought it is another day for a light meal. So I decided to make this dish for dinner tonight. It is low calories, full of vitamins, light and so delicious!! I love simple greek yogurt and mixing it with salads and meals as a sauce is one of my favourite combinations. I think it gives sort of a tangy and delicious taste to any veggie dish which I love. So I just wanted to share this with you all and hope you like it!

Serve : 3


400 gr. fresh beet green , washed and cut into bite-sized pieces

1 onion , chopped

3-4 eggs

1 clove garlic, minced

2 tbs olive oil

1 tbs butter

Salt to taste

Black pepper and chili pepper to taste


1 cup yogurt

1 clove garlic , mashed

Salt to taste

Mix yogurt , garlic and salt in a small bowl and set aside .


1- Bring to boil about  1 liter water in a large stewpot and place the beet greens in the stewpot. Cook it over  a high heat until the greens look wilted for 2-3 minutes . Then remove the stewpot  from  the heat and strain the beet greens with a strainer  , set aside it .

2- Heat the olive oil and butter in a large saucepan and add onion , a little salt , sauté it , add the garlic and then add  the beet greens and cook them  until beet greens liquid has evaporated for  about 2 minutes .

3-Add  the eggs , black pepper , chili pepper  to taste, stir them together and cook until the egg stiffen for 2 minutes . Serve it with yogurt sauce.
