5 cup all-purpose flour

1 cup milk

2  cup water

1 tsp sea salt

10 gr dry active yeast

1 tbsp butter

2 tbsp vinegar

1/2 tsp sugar


Place the warm water ,milk, sugar , salt ,vinegar, butter and yeast  in a bowl  and mix .  Put the flour   in the bowl and   knead it until an elastic dough  for 10 minutes or use a mixer and mix it for 4 minutes  ,medium speed .

Cover the dough with a cling -film and dish towel , let it until rise about 30 minutes .Then you press dough with your hands and place it in your freezer for 5 minutes .

Cover a tray with the cling -film and press with a spatula on it . Shape it a square 20 X 20 cm . Place it  in the freezer  for 2 minutes .

Place the dough on floured work surface , roll out the dough big square shape 45 x 45 cm . place the butter  in the center of the dough . Cover it like an envelope with the dough . Press the dough to completely seal   the butter . Lightly flour the dough and surface .Roll the dough a rectangle shape 25 x 60 cm .Use a sharp knife  to trim the edges of the dough . Fold it like a business letter .

Place it on a tray a put it in the freezer for 10 minutes . Remove the dough from the freezer and roll and fold as the same first one .Repeat this action 5 times , after the fifth, cover it and place in your  Refrigerator for at least 2 hours or for 12 hours .

Preheat your oven to 240 degree C . Remove the dough from the refrigerator and roll out like a large rectangle .

Cut a rectangle shape and put in grated chocolate or cheese  then roll to enclose it. Place them on a sheeted tray and  cover with a tea cloth, rest it for 30 minutes . Brush over the top of your croissant with egg wash and bake the Croissant .

Cool them before the serving .
