Red lentil soup with mint is  aromatic ,  easy , and delicious for winter days .


1 cup red lentils , washed and drained

2 tbsp basmati rice

1 medium size onion , diced

4 tbsp olive oil

1 tbsp butter

1 tbsp dried mint

1 tbs tomato paste

1 tsp sea salt

1/3 tsp chili pepper

2 cloves garlic , minced

10 cup water

For serve, lemon slices


Melt  the butter and olive oil in a deep medium sauté pan , over medium heat and add the onion ,salt  . Cook it until golden yellow about 1-2 minutes and add the garlic , then add the tomato paste , stir it , add the red lentils , the rice and the water . Stir it and add the chili pepper . Simmer until the lentils  are tender  30- 45 minutes . Sprinkle dried mint .

Serve with lemon slice .
