300-400 gr. liver , gristle removed and diced , washed
1 cup all- purpose flour
2 cup sunflower oil
1 tsp salt
1 big size red onion , chopped julianne stile
1/2 cup parsley , chopped
1 little size fresh red pepper , chopped
1/2 lemon juice
1 tsp sumac
Salt , red pepper flakes to taste
Place the flour and salt in a bowl and mix . Add the liver pieces and toss until well coated , then transfer them to a sieve . Heat the oil in a deep frying pan , ( add a little bread in to the oil , when the bread is browned , the oil is ready for liver cooking .) Add the liver pieces and fry it until golden brown for 2-3 minutes . Remove the liver with a slotted spoon to paper towels to drain .
Let the liver rest at room temperature . Place the onion , parsley ,fresh red pepper in a bowl and add the liver , lemon juice , sumac . Add a little salt , a little chili pepper to taste . Serve it with lemon slice .
