FOR BOLOGNESE SAUCE INGREDIENTS :
300-400 gr. meat , minced
1 onion , chopped
3 cloves garlic , minced
1 tbsp tomato paste
2 big tomato , grated
1 tbsp butter
1 tbsp olive oil
1 tsp red pepper flakes
1/2 tsp black pepper
1-2 basil leaves
1/3 tbs cinnamon
1 pinched cumin
1/2 tsp muskat
Sea salt to taste
1 tbsp fresh herbs ( rosemary , theme) , chopped
FOR BOLOGNESE SAUCE DIRECTIONS :
Melt the butter , olive oil in a deep medium sauce pot over the medium heat and add the onion , a little salt .
Saute 1-2 minutes and add the meat and cook stirring , 4-5 minutes , add the garlic , carrot , tomato paste , then add the grated tomato , cook 6-7 minutes and add the water , simmer and stir until the sauce is thick , smooth and creamy about 2O 30 minutes . Add the herbs , peppers , cumin, cinnamon, musk-at and salt to taste , remove the heat . Set aside .
FOR BECHAMEL SOUCES INGREDIENTS :
1 tbsp butter
2 cup milk
1 cup water
1 carrot , diced
2 tbsp fresh cream
2 cloves garlic , minced
1/4 tsp musk-at , grated
1/4 black pepper
Salt to taste
1-2 Bay leaf
FOR BECHAMEL SAUCE DIRECTION :
Place the milk , water , carrot and bay leaf In a medium saucepan , Boil and whisk over medium heat .
Strain with a strainer . Melt the butter in a deep saucepan . Add the flour and whisk until color yellowish about
2 minutes . Gradually add the milk, cream whisking constantly to prevent any lumps. Add the boiled carrot , minced garlic . Continue to whisk and simmer until the sauce is thick ,smooth and creamy . The sauce should be thick enough to coat the back of wooden spoon .
Remove from the heat and add salt , musk-at .
FOR CHEESE INGREDIENTS :
100 gr. ricotta cheese
150 gr. mozzarella cheese
350 gr. fresh kashkaval cheese or cheddar cheese
In a bowl , mix the ricotta cheese , and mozzarella cheese , cheddar cheese or fresh kashkaval cheese and set aside this mix cheese .
FOR LASAGNA PREPARATION DIRECTIONS :
Place béchamel sauce into your baking dish .
1- Arrange the pasta sheets by side by , covering the bottom of the baking dish and sprinkle 3-4 tbsp hot water onto the pasta sheets , then sprinkle bolognese sauce and smear bolognese sauces then sprinkle béchamel sauce and the mix cheese .
2- Arrange another layer of pasta sheets , spread the warm water and bolognese sauce , béchamel sauce .Sprinkle the mix cheese on top of the bolognese sauce .
3- Repeat this procedure for 6 layer of the pasta sheets .
4- Arrange the final layer of pasta sheets on top with remaining hot water and béchamel sauce .Place the mix cheese on top of the béchamel sauce .
Preheat your oven 220 degrees C. Put on the middle rack of the oven ,bake it until tender the pasta sheets about 20 minutes . Remove on the middle rack and put down rack of the oven and continue to bake until golden yellow about 5-8 minutes . Remove your lasagna from the oven and sprinkle remaining cheese immediately .Before serving let rest for 5-6 minutes .
