Making Pickle is easy and joyful , natural , healthy , pure .
1500 gr.-2000 gr. cucumber , fresh crispy , washed and drained
350 -400 gr. fresh green hot pepper
1 kg. carrot , washed and chopped
1 cup sea salt or pickling salt – not table salt
1 cup vinegar
1/3 cup dried chick-pea
1 tsp red pepper flakes
10- 15 cloves garlic , peeled
1/2 bunch dill ,( Optional )
3 liter water
A big jar for 5 liter
Bring to boil the water and remove from the heat . Add the salt , stir until dissolve the salt and let cool, set aside .
Place some cucumber on bottom of a big clean jar . Add fresh green pepper carrot , the garlic , the red pepper , then place the remaining cucumber over the pepper and carrot . Pour the vinegar and water in the jar . Press the cucumbers down .Cover the lids over the jar, tightly . Let the jar cool to room temperature .
Vegetables soaked in a brine solution for 4- 6 weeks , the color of the vegetables changes from bright green to pale green . Check the jar every week to ensure that the cucumbers remaining submerged in the brine and check taste , if it is reduced salt , add 1-2 tbsp sea salt .After 4 – 6 weeks taste a small of the cucumber and deciding , it is done , serve it .
