Green lentil soup with baked pasta is delicious and healthy ,warmth for cold day .
FOR HOMEMADE PASTA DIRECTIONS :
Place 1 cup flour and an egg in a medium bowl , add 2 tbsp water and 1/2 tsp sea salt . Using the tips of your fingers , mix them , incorporating a little at a time , until everything is combined .Knead the dough until smooth and elastic .Then cover with a tea towel and let stand 15 minutes.
Then dust your work surface , place the dough and roll the dough out properly , lightly dust both sides of the pasta with a little flour . You will need to know when to stop .You make to roll the pasta down to between the thickness of a tortillas and a playing card . Then cut into strips of desired a sharp knife and place a baking tray and preheat your oven 180 degrees C . Bake until golden yellow .Remove the oven and let it cool .
Place the baked pasta in a dry glass jar and use it for soup or whatever you like .
FOR SOUP DIRECTIONS :
Put the green lentils and the water in a medium soup pot and boil over a medium heat , cook until andante for 15 minutes then remove from the heat , set aside it .
In a medium soup pot , heat olive oil and butter over the medium heat . Add the onion , salt . Cook and stir until the onion is tender . Add the tomato paste and stir then add the boiled green lentil and the hot water . Add the homemade pasta , simmer until the lentils and the homemade pasta are soft . if the soup is
a litte thick ,add some more hot water . Then taste and season with sea salt and red pepper flakes , dried mint . Remove the heat and serve it .
