FOR BAKING INGREDIENTS :
125 gr. plain ( all-purpose flour )
40 gr. cocoa powder
2 tbsp caster ( super fine ) sugar
125 gr .unsalted butter
2-3 tbsp cold water
1 tsp vanilla extract
26X26 cm. baking tray , line with baking paper
FOR FILLING INGREDIENTS :
1 cup frozen sour cherries , chopped
1/3 cup sour cherry juice
3 tbsp icing ( confectioners ) sugar
1-2 tbsp dried , ground coconut
4- tsp corn starch , melted in 4 tbsp cold water
4 tbsp Sweetened condensed milk
1 tbsp unsalted butter , melted with bain-marie stile
1 tbsp coconut oil , melted with bain-marie stile
FOR BAKING DIRECTIONS :.
Preheat the oven to 180 degrees C,
Sift together the flour and cocoa in to a bowl or a mixture , add the sugar , butter and vanilla , water, then mix to form a dough . Place onto a well-floured surface . Knead for 1-2 minute , then roll out with a rolling pin and placing into your baking tray . Chill for 15 minutes . Cover with baking paper and baking beads and bake for 10 -15 minutes .Remove the paper and beads ,then bake for 3-4 minutes . Let to cool to room temperature .
FOR FILLING DIRECTIONS :
Place the sweetened condensed milk , milk , sugar and the chopped sour cherries in a medium sauce pan over the medium heat , Cook about 2-3 minutes then add the corn starch and stir until thickness ( like a pudding thickness ) then remove the heat . The dried ground coconut , the butter and coconut oil and stir , let a rest 1-2 minutes , then spread over the base . Chill until thickness for 1 -2 hours .
FOR TOPPING INGREDIENTS :
100 gr. dark chocolate
2 tbsp crema
1/2 tbsp butter
1 tbsp sugar
Place the creme , sugar , chocolate and butter in a litte heatproof bowl .Bring a saucepan of water to the boil and sit the bowl over the pan ,( don’t let the bowl touch the water ) stirring occasionally until melt . Pour over the cooled cherry mixture immediately , then chill until become hard . Cut into squares and serve .
