DOLMAS -GRAPE LEAVES WITH MEAT STUFFING

INGREDIENTS  :

300-350 gr. grape leaves , soaked  in hot water for 10 minutes

250-300 gr. minced lamb or minced beef

1 big onion , diced

1 cup basmati rice

1tbsp butter , room temperature

1tbsp tomato paste

1tsp sea salt

1/2 tsp red pepper flakes

1/3 tsp black pepper , ground

2 tbsp parsley , chopped

1 tsp dried mint

FOR YOGURT SAUCE INGREDIENTS :

2 cup plain yogurt

1-2  cloves  garlic , minced

Sea salt to taste

Place the yogurt and  garlic in a bowl , add  salt , set aside .

FOR COOKING INGREDIENTS :

1 little onion , chopped

1tbsp butter

2 tbsp olive oil

1/2 tbsp tomato paste

1/2 tsp sea salt

Melt butter and olive oil in  a deep medium sauce pan over the medium heat . Add the  onion and salt , sauté it .

Add the tomato paste and stir .Remove the heat and set aside .

DIRECTIONS :

Place the onion , butter , ground meat  ,rice , salt , pepper , parsley , mint and  2 tbsp water  in a bowl . Combine them .

On a work surface , lay out grape leaves , their points at the top and the smooth sides down . Place a teaspoon of mixed meat in the base of the leaf .

Fold the sides over and firmly roll up . Cover the filling  . Place remaining  leaves in the saucepan in layer .

Place the dolmas with meat in the saucepan . Add 1/2 tsp sea salt , lay a plate over the top to press the dolmas , pour 2 cup hot water . Cover with the lid and cook over a  low heat for 30-45 minutes . Check it , if the dolmas liquid is reduced , add some hot water again . It is done , remove from the heat and serve warm with the  yogurt sauce .
