This apple cupcake that smells perfect and it is very delicious , specially for the fall season .
Apples are low in calories . Apple fruit contains good quantities of vitamin C , beta carotene . Apples are extremely rich in important antioxidants . It also contains B- complex vitamins and these vitamins are key in maintaining red blood cels and the nervous system in good healthy . “An apple a day keeps the doctor way ” is an old Welsh proverb and these days a wealthy of research suggests that eating apples may impact your health in a number of heathy beneficial ways .
2 cup all purpose flour , Whisk together 1 tsp baking powder and 1/2 tsp carbonate , one pinch salt .
1 cup sugar
1/3 cup whole milk
1/4 butter , melted
1/2 olive oil
2 medium size Granny smith apple , peeled and grated , mixed 1 tsp cinnamon
1/3 cup walnut , fine chopped
1/3 cup sultanas
one pinch salt
Preheat the oven to 180 degrees C. ( 340 F )
In the bowl of electric mixer fitted with the paddle attachment and place the sugar and the eggs in the bowl of electric mixer . Beat the sugar and eggs until light and fluffy , 5-6 minutes at high speed . Then stop the electric mixer and continnue to work with your wire whisk . Add the butter and olive oil , milk . Gently beat in the milk and the butter, olive oil .
Add the grated apple in the bowl and mix , then add the flour in the bowl and gently beat with the wire whisk until completely incorporated . Add the walnut and sultanas , one pinch salt . Beat one at a time . Divide the batter evenly among lined cups . Bake for 20 minutes , or until the cupcakes spring back when touched with your finger , or until toothpick inserted in center comes out clean .Let cool completely before frosting .
FOR PASTRY CREAM FILLIN AND FROSTING INGREDIENTS :
2 tbsp all purpose flour
1 tbsp corn starch
1/2 cup sugar
1 and 1/2 cup whole milk
2 tbsp butter , unsalted
1/4 tsp vanilla extract
3 sheet gelatin , soaked in 4 tbsp hot water
400 gr. cream cheese
2 tbsp butter ,room temperature ( about 65-70 gr.) , for the cream cheese
1 cup powdered sugar
Green food coloring , for garnish ,optional
FOR PASTRY CREAM AND FROSTING DIRECTIONS :
Place the sugar , milk , flour , corn starch , egg in a medium saucepan and whip with a stainless steel food mixer , then cook keeping whisk , over low heat until thickness . Then remove from the heat
and add the 2 tbsp butter , stir until the butter dissolves . Let cool your cooked pastry cream .
Meanwhile In a large bowl using electric mixer on low speed , beat the butter , then beat cream cheese , and vanilla , Powdered sugar until smoothy . Then combine the cooled pastry cream , soaked gelatin and the mixed cream cheese in the bowl and mix to high speed until fluffy and smoothy . Put it your refrigerator about 1-2 hours and chill it . Then put the frosting into a pastry bag and use for cupcakes and decorate them .
