STUFFED CABBAGE ROLLS WITH MEAT

Hello everyone! As the weather is getting colder, I decided to make this tasty cabbage recipe.  Cabbage may not be the friendliest of vegetables but this recipe is truly delicious.  It it will make u feel warm inside in these cold winter days! Cabbage is also very healthy and  is rich antioxidants , vitamin C  , rich other  essential vitamins which is another reason why this recipe is great! hope you enjoy!

INGREDIENTS :

1000 gr. -1500 gr, cabbage , removed the center core of cabbage and removed the outer leaves

300 gr. beef , minced

1 cup  basmati rice , washed ,dried

1 big onion , diced

1 tbsp tomato paste

1 tbsp butter , room temperature

1 tsp sea salt

1/2 tsp red pepper flakes

1 tbsp parsley , chopped

1 tsp dried mint

2 tbsp water

FOR COOKING INGREDIENTS :

1  litte onion , chopped

1/2 tbsp tomato paste

1 tbsp butter

3 tbsp olive oil

Melt the butter and olive oil in a deep medium  saucepan over the medium heat .  Add the tomato paste , stir and remove the heat , set aside .

DIRECTIONS :

Bring to boil water in a big saucepan over high heat . Add the cabbage leaves and steam just tender ,about for 40-50 second , then transfer into cold water and simmer with a slotted spoon , set aside .

Place the onion , butter , ground meat , rice , salt , pepper , parsley , mint and 2 tbsp  water in a bowl . Combine them  and then , on a work surface , lay out cabbage leaf ( cut it like  a medium envelope size ) . Place a teaspoon of filling in the base of the leaf  . Fold the sides over and firmly roll up.  Cover the filling  and fold up .

Place  remaining leaves in the saucepan in a layer . Place the dolmas in the saucepan . Add 1 tsp sea salt and  Lay a plate over the top to press the dolmas . Cover the lid and cook over a low heat  for 35-40 minutes , checked it , if the dolmas liquid  is reduced ,add more hot water again . It is done , remove from the heat and let a rest for 5 minutes , serve with yogurt sauce .

FOR YOGURT SAUCE DIRECTIONS :

Combine  2 cup yogurt ,1 cloves minced garlic  and 1/4 tsp sea salt  in a medium bowl , stir and serve with dolmas .

  1. My Hawaiian mom used to make something like this growing up! She used Japanese white rice. Seeing this makes me nostalgic!
