Leek with meat and rice suprisingly light and colorful  and  that warms you up. It is specially delicious for cold days and  It  also contains  vitamin B6 , vitamin A , vitamin K , Vitamin C ,Manganese , Folate and iron .


800-900 gr. fresh leeks , chopped , washed ( Before using leeks, it is essential to clean them well as dirt , sand , can collect between the layers .)

2 medium carrot , chopped

400- 500 gr. mutton   ( or beef or another meat ), chopped

1 medium onion , diced

1 tbsp tomato paste

1/3 cup basmati rice , washed

1 tbsp butter

3 tbsp olive oil

1/2 tsp red pepper flakes

1tsp lemon  zest

Sea salt to taste

5 cup water

1 cup broth if desire


Heat the olive oil in  a large pan over medium heat. Add mutton or another meat , fry until  its  color is   changed  and pour 1 cup water , bring  it to a boil , cover and decrease  the heat to low .

Simmer for  15-20 minutes or until mutton is softened and reduced the liquid.           Add the 1 tbsp butter , diced onion  and cook  until  color is  changed .  Add the tomato paste and rice , then add the leeks , carrots  , stir and pour the water , add red pepper flakes  and sea salt to taste . Bring it to boil . Cover again and cook until leak is  softened .

Then add the lemon zest , if reduced its liquid  , add more hot water  and  keep cooking for 2 minutes  . Serve with lemon slices .
