CRISPY ROLLED PASTRY WITH MINCE

Working  with filo-pastry or working  with Turkish yufka  is easy to make and taste . Step   by step describes  from scratch .

INGREDIENTS :

4 sheet filo -pastry

2 eggs

1 cup whole milk

1/3 cup olive oil

FOR FILLING INGREDIENTS :

300-400 gr. mince

1 tbsp butter

2 cloves garlic , chopped

1 medium onion , diced

2 fresh green pepper, chopped

1 medium tomato , chopped

1/2 cup parsley , chopped

1/2 tsp tomato paste

1/2 tsp red pepper flakes

Black pepper and sea salt to taste

FOR YOGURT SAUCE INGREDIENTS

1 cup strained yogurt

1 clove garlic , minced

Salt to taste

Combine  strained yogurt and garlic  in a little bowl and add salt to taste , set aside .

DIRECTIONS :

Melt the butter in a medium saucepan over medium heat , add  the onion , chopped garlic , fresh green pepper,  a pinch sea salt and cook for 2 minutes  or until tender . Add  the  mince , stirring constantly  and cook for 5 minutes or until browned . Add the tomato paste,  chopped tomato  and red pepper flakes , black pepper ground , sea salt to taste . Cook for 5-6 minutes and remove from the heat , set aside and let cool it .

Meanwhile , place the milk , eggs , olive oil , a pinch salt in a medium bowl and whip with a fork  until they are combined .

Preheat  the oven to 240 degrees C.

Lay your  1 sheet filo- pastry or 1 sheet  Turkish yufka on the work surface and  brush with the mixed milk  , then  lay second sheet fil0-pastry or Turkish yufka and brush with the mixed milk . Cut the pastry  into   12 pieces  like triangle  shape. Place 1 tbsp  the cooked mince  on the  end of a pastry triangle , then fold each side and continue  rolling in to a cylinder . Place  them on a sheeted baking tray and brush with egg wash . Bake  for 15-20 minutes until golden and crispy . Serve with yogurt sauce or plane .

You can also use  to filling  left over roast chicken , cheese , boiled potato and cooked spinach in this recipe .
