YOGURT SOUP WITH CREAM AND CHICKPEA

Yogurt soup is my favourite type of soup. It really is so delicious and is perfect for the winter season when it is freezing outside!  Hope you enjoy!

INGREDIENTS :

1 and 1/2 cup plain thick yogurt

1 egg

1 tbsp all purpose flour

1/3 cup rice

1/2 cup chickpeas, boiled , drained

1/2 cup crema

1 tbsp butter

1tsp dried mint

Sea salt to taste

10 cup water

DIRECTIONS :

Place  plain yogurt , egg and yogurt ,cream, 1 cup  water in a deep pan .  Whisk  them  with a cream whipper and to make smoothy batter , making sure there are no lumps . Pour the remain water and add the rice , chickpeas .

Then put the pan over medium heat . Keep stirring until  bring it to a boil and after boiled reduce the heat to low . Cook  it  for 20 -25 minutes or until the rice is tendered.

It is done,  switch off the heat and keep the pan aside . Melt the butter a small pan and add dried mint , pour the melted butter in the yogurt soup .

Finally  add the sea salt to taste and serve .
