There are many ways to cook with eggplant , This recipe is the easyest and very tasty , aromatic .Fresh garlic and fresh red bell pepper make it extra healty .
Eggplant is low calories and it contains good amounts of many B complex groups of vitamins,Riboflavin , Coppers ,Fiber ,Antioxidants ,vitamin A, vitamin C vitamin K . Eggplant contains many health benefits , These are some of the great benefit : weight loss , skin tone , mind healthy .
300-400 gr. mutton or beef , chopped
3 long eggplant , peeled in strips of the eggplants, cut ,( thick slices ), soaked in salted water for 10 minutes, pulled out some of their bitter liquid ,drained
1 middle size onion , diced
5 tbsp olive oil
1 tbsp butter
1 tbsp tomato paste
2 middle tomato , chopped
1 fresh red bell pepper
4 cloves garlic ,finely chopped
1 tbsp parsley , chopped
1/4 black pepper , ground
1/2 red pepper flakes
1 cup hot water
Sea salt to taste
Sauté the chopped mutton in a 2 tablespoon of olive oil , until the mutton has browned, over middle heat , then add 1 cup water and cook, until it softens and its liquid is absorbed . Add 1 tbsp butter , onion , fresh red bell pepper and chopped garlic .
Cook, until they are golden , then add the tomato paste , diced tomato , red pepper flakes , black pepper, parsley and sea salt to taste , Stir and cook for 2 minutes and remove from the heat , set aside .
Heat another 3 tablespoon olive oil in a wide saute pan , add the dried eggplant slices and fry, until lightly golden brown on both sides , about 1-2 minutes , over high heat , Then reduce the heat to low heat and place the sautéed mutton on the fried eggplants . Pour 1 cup hot water in the pan and cook until the eggplants are tender. Eggplant is cooked serve with fried rice .
