Broccoli salad with garlic dressing recipe is simple , light , perfect side dish for roasting meal and so delicious .
Broccoli is a very low calorie vegetables and anti-oxidant . Broccoli nutrients provide many healthy benefits . It is a rich source of vitamins C , vitamin A, vitamin K, Calcium , in addition to fiber, potassium , folate , and iron .
400-500 gr. Broccoli , Trimmed woody stem ends with a knife and divided into small , individual florets ,each short stems and sliced the thicker steams . Washed , drained
2 middle size Carrot , washed ,chopped
1 tbsp Pomegranate
1tbsp , Halloumi cheese , grated
FOR DRESSING INGREDIENTS :
2 cloves garlic , minced
3 tbsp olive oil
1 tbsp grape vinegar
1tbsp fresh orange juice
1/2 lemon juice
1/2 tsp red pepper flakes
Black pepper to taste
Sea salt to taste
Place the olive oil, garlic , lemon juice , vinegar , orange juice ,red pepper flakes , black pepper in a little bowl and mix them . Add the salt to taste and set aside.
Prepare a bowl of ice water and set aside . Fill a large pot with 2 liters water and bring the water to a simmer over high heat . Add the carrot and stems in the pot , then insert a steamer basket in the large pot and place the broccoli florets in the steamer basket .
Cover with a lid and cook for 5-8 minutes until tender. Then remove with a slotted spoon and plunge immediately in the ice water. Let they cool and drained .
Place the cooked broccoli and carrots in a big bowl , Pour the dressing over the vegetables and toss , Transfer in the serve plate and add the pomegranate and sprinkle the cheese , then serve .
