Spinach with egg is a fantastic dish for brunch , lunch or dinner . Spinach with egg is an easy , healthy , nature and very delicious .

Spinach  loaded with vitamins , like vitamin C , vitamin  A vitamin, K vitamin D and E and a host of trace minerals .  Vitamin C is a powerful antioxidant . Good source of omega 3 fatty acids , Very low calories and fats . It contains a good amount of soluble dietary fiber , potassium  , manganese  , copper .


400 gr. Spinach leaves  , washed ,spun it dry in a salad spinner and dried

1 Onion , peeled,  diced

4 eggs

1/2  fresh yellow pepper

2 tbsp olive oil

1/2 tbsp butter

2 cloves garlic , finely chopped

Red pepper flakes and sea salt to taste

1 cup  thickness , plain yogurt, mixed with a little sea salt, for serving


In a large saucepan , heat the olive oil  over medium heat  and add the diced onion , chopped yellow pepper , a little sea salt and sauté  them ,until they are  softened  , then add the garlic and sauté the garlic for 30 second , but not until it’s browned.

Add  the butter and  all the spinach , stir  the spinach leaves into the onions ,  cook  it for 2-3 minutes until all  the spinach  is wilted and cook until most of the liquid  has evaporated . Add  some red pepper flakes . Press four indentations into the spinach and  place one egg into each  .

Then turn the heat  down and leave them to cook , until the eggs are thickened . Serve immediately  with the  thickness  yogurt .
