VALENTINE’S DAY CUPCAKE WITH CHOCOLATE

Chocolate cupcake is so delicious and simple to make . These delicious cupcakes are moist, tender ,rich chocolate . Bake a delicious Valentine’s day cupcake for your sweetheart , family , friends .

INGREDIENTS :

1 and 1/2 Cup plain flour

1OO gr. unsalted butter

1 egg , beaten

2 tbsp cocoa powder

35-40 gr. dark chocolate  melted  with 2 tbsp flower oil

1tbsp white wine vinegar

1 tsp lemon zest

1/2 tsp baking powder

1/2 tsp bicarbonate

1/2 cup heavy cream

1 pinch salt

FOR CREAM CHEESE FROSTING INGREDIENTS :

30-35 gr. unsalted butter , in room temperature

1 cup cream cheese

1 cup ricotta cheese

1/2 cup icing  sugar

1/2 tsp vanilla extract

2 tbsp cocoa powder

To make frosting , put the butter into a bowl and beat it with an electric mixer until  just pale and creamy . Add the icing sugar , vanilla extract . Beat together until just combined , then add the ricotta cheese and cream cheese  and use an egg beater   , beat  until just combined .  Then add  the cocoa powder and beat until just combined . Place it in the refrigerator for 20-25 minutes .

DIRECTIONS :

Preheat the oven to 180 degrees C. / 350 degrees F.

1-         Sift together the flour , baking powder , bicarbonate , cocoa powder and one pinch salt in a  bowl .

2-          Put the butter and sugar in a mixing bowl and beat with an electric mixer until just  pale and fluffy . Slowly beat in the egg mixing well . Gently mix in half the sifted dry ingredients , then repeat  with the remaining  dry ingredients  . Add the melted chocolate  , oil , wine vinegar and vanilla and beat them just until combined .

3-          Divide the mixture between the muffin cases . Bake in the preheat oven for 20-25 minutes  or until risen and  golden .  Remove from the oven and Leave to cool .

4-       Spoon the frosting in to a piping bag fitted with a star-shaped tip and pipe onto the cupcakes ,then sprinkle with chocolate chips or decorate sweet.

For cream cheese frosting  :  Beat the butter  until  just fluffy and smooth , then add the icing sugar
