STUFFED BELL PEPPER WITH SPINACH

Stuffed bell pepper with spinach is easy dish and wonderful appetizer  and side dish. Fresh bell peppers are rich source of vitamin C . Also bell peppers have very hight content vitamin A and vitamin E .

INGREDIENTS :

2  red  bell peppers , wash , cut peppers  in half length-wise and removed the seeds and ribs inside the peppers .

200 gr. spinach , washed , dried and cut

1/ 2 red onion , chopped

1 cloves garlic , minced

1  Cup grated Emmental cheese or grated Cheddar , divided

1/ 3 Cup feta cheese , grated

Sea salt to taste

1/4 tsp red pepper flakes

2 tbsp olive oil

1 tbsp canola oil for grill

DIRECTIONS :

Heat 2 tbsp olive oil in a large pan over medium heat and add  chopped red onion . Sauté until soft , then add minced  garlic  and spinach . Cook  for 4-5 minutes or until liquid is absorbed .Add sea salt  , red pepper flakes  to taste . Remove from the heat  , add feta cheese , grated  Emmental cheese and combine them .

Meanwhile place bell  peppers  in a grill pan with 1 tbsp canola oil  and grill them .  Place bell peppers in a sheeted  baking tray. Place equal  amounts of cooked spinach into peppers .

Sprinkle  2 tbsp grated cheese over each pepper and  Preheat the oven to 220 degree C. Bake for 20-25 minutes or until cheese is melted . Remove the oven end serve hot .
