Hello every body , I made chocolate cup cakes and topped them all with pastry cream , cream cheese frosting, This is a delicious pastry cream recipe with vanilla flavor, I combined pastry cream and cream frosting and it is worth the effort .Cup cakes are tasty ,natural and healthy .
CUP CAKE INGREDIENTS:
2 Cup plain flour
1/2 Cup milk
1/2 Cup olive oil
45-50 gr. unsalted butter
1 Cup sugar
1/4 Tsp vanilla extract
1/2 cup cocoa powder
1 tsp baking powder
1 tsp vinegar
120-125 gr. Dark chocolate , melted
FOR THE FILLING INGREDIENTS AND DIRECTIONS
3 Tbsp plain flour
2 Tbsp corn starch
1/2 Cup sugar
1 and 1/2 Cup whole milk
75 gr. Unsalted butter, room temperature
400 gr. Medium soft cheese ,mixed with 1 Cup icing sugar , 1/4 tsp vanilla extract
4 sheet gelatin , soaked in 4 tbsp hot water
2 tbsp cocoa , for coloring
1 ) Place the sugar , milk ,plain flour , corn starch , egg in a medium saucepan and beat them , cook keeping beat, over low heat until thickness . Then remove the saucepan from the heat and add the butter , stir until the butter melts . Let cool your cooked pastry cream .
2 ) In a large bowl using electric mixer on low speed , beat 1 tbsp butter , then beat the soft cheese , and add the vanilla ,powdered sugar beat them until smooth . Combine the cooled pastry cream , soaked gelatin and the cream cheese mixture in the bowl and mix to medium speed by the electric mixer until it is fluffy and smooth. Then place the mixed frosting in the refrigerator about 1-2 hours .
CUP CAKE DIRECTIONS :
Preheat the oven to 180 degrees C. / 350 degrees F.
1 ) Beat the butter and sugar together until creamy . Gradually add the eggs , Beating well after each addition , add the milk , olive oil , vanilla extract . Add the sifted flour and cocoa powder, mix them . Then beat the mixture until combined . Add the melted chocolate in the mixture.
Divide the mixture among the paper cases and bake for 15 minutes until the cakes center feel firm to the touch . Remove from the oven , leave to cool completely . When the cakes have cooled , decorate with the filling frosting .
Cooking pastry cream ; Mix the milk, egg, flour, corn starch and cook .
Beat the cooked and cooled pastry cream , the cheese mixture, soaked gelatine sheet together .
