Hello everyone todays recipe is Tasty lemon cake. Lemon cake is the perfect way to end a spring or summer meal. Making delicious lemon cake is an art. This directions will show you how to make the most tender and moist lemon cake ever.

Also lemon is an excellent source of vitamin C, and one of the most important antioxidant in nature.


125 gr. unsalted butter  at room temperature, 1 and 1/2 cup icing sugar, vanilla, 1 tbsp lemon juice  for buttercream.[Butter cream is an optional  for Lemon cake topping.]

1 cup all purpose flour

1 cup whole milk

1 cup olive oil

1 cup granulated sugar

4 eggs , at room temperature

1 tbsp lemon zest

3/4 cup freshly squeezed lemon juice

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp vanilla extract




Preheat the oven to 180 degrees C. ( Grase 15X30 cake pan , you may line the bottom with parchment paper, if desired. )

1- Beat the sugar and eggs in the bowl of an electric mixer fitted with the paddle attachment , until light and fluffy , about 3-4 minutes, with the mixer on medium speed.

2-  Add the milk , olive oil  in the bowl and in another bowl combine the flour, baking powder, baking soda and then add the half flour and mixing with a wire whisk until combined. Repeat the remaining  flour.

3-Finally pour the lemon Juice  in the bowl ,  add the lemon zest and mix until combine.

4-  Spoon mixture into prepared cake pan , spread evenly . Place in the oven and bake for about 45-60 minutes , or wooden skewer inserted into the centre of the cake comes out clean. Remove cake pan from the oven and  let the cake cool.

5- Then decorate with lemon glaze  and melted chocolate.

FOR THE GLAZE  DIRECTIONS = Combine  1/4 cup  icing sugar and 2 tbsp lemon juice together in a small bowl , mixing with a wire whisk until smooth.

Enjoy  .

Finally add the fresh lemon juice, lemon zest and whisk until combine.



Bake for about 45-60 minutes.{ 180 degrees C.}

    • Hey Sabrina! The cake itself doesn’t have butter… I used the butter to make the buttercream but I decided not to put the buttercream on the cake later on so didn’t write how its made! Now I realise it looks a bit confusing I will update it to make it more clear! Thank you for your comment! 🙂
