Kale is a healthy vegetables and it is rich in nutrients and this food is low in saturated fat. Kale is also very good source of Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium , potassium, Copper and manganese. Kale is a good source of dietary fiber,protein,folate , iron , magnesium , riboflavin.
300 gr-400 gr. Kale, washed, dried, cut into bite- sized pieces
1 medium size onion , diced
1 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1/3 cup walnut, chopped
1/2 cup thickened plain yogurt , added one pinch salt to taste
Salt and red pepper flakes to taste
1- Place Kale in a large stewpot and pour about 1 liter water into the stewpot . Cook it over high heat until the greens look wilted for 5-10 minutes. Then remove the stewpot from the heat and strain cooked Kale with a strainer, set aside.
2- Heat olive oil and butter in a large saucepan, add diced onion, a little salt, fry the onion, until golden yellow. Add the diced garlic and then add cooked Kale. Continue cooking until the Kale liquid has evaporated and tender.
3- Add the eggs, stir them together and cook until the egg stiffen for two minutes.Sprinkle red flakes and salt to taste. Serve with yogurt and walnut .
