Prepare time= 1-2 hour
Homemade no-bake cheesecake is very delicious, creamy and easy . Excellent for special occasions!
400gr. Digestive biscuit and sandwich biscuits ,crushed
800 gr. cream cheese or philadelphia classic cheese
1/2 cup almond, grated
150gr. unsalted butter, melted
160gr. white chocolate, melted
5 gelatine leaves, soaked the gelatine in cold water for 1-2 minutes.
200 ml thickened cream
4/3 cup condensed milk ( If you want to cook homemade condensed milk ,see the homemade condensed milk recipe, I used homemade condense milk.)
1 cup icing sugar.
50 gr. unsalted butter
1 tbsp lemon juice
1/4 tsp vanilla
1- Folded with strechfilm , 25cm springform cake pan. Combine the crumbled biscuits and the melted butter. Then press into base of cake pan. Chill for 30 minutes.
2- Place white chocolate in a bowl set over a pan simmering water ( don‘t let the bowl touch the water ), stirring until smooth.
3- Heat the milk a pan over a medium heat until just below boiling point, add the squeezed gelatine leaves to the hot milk , stir and set aside.
4- Beat cream cheese, condensed milk and milk mixture in a big bowl with an electric mixer ,( on medium speed ) until smooth. Add the melted white chocolate, vanilla and combine them. Whisk cream to soft peaks and then fold into chocolate mixture. Pour over biscuit base. Chill for 10 hours or overnight.
5- Spoon strawberry sauce over white chocolate cheesecake and if desired, drizzle Wilton Sparkle Gel over the white chocolate cheesecake with strawberry sauce. Cut and Serve it with remain strawberry sauce.
STRAWBERRY SAUCE INGREDIENTS AND DIRECTIONS
1/2 cup sugar
1/2 cup water
2 tsp corn starch , dissolved in 1/2 cup cold water
Place strawberry and sugar, lemon juice in a pan over medium-low heat, stirring to dissolve sugar. Cook for 2-3 minutes and add the corn starch , cook until thickens and chill until ready to serve.
HOMEMADE CONDENSED MILK INGREDIENTS AND DIRECTIONS
500 ml whole milk
1/3 tsp baking soda
35gr.( approximately 1 tbsp unsalted butter) unsalted butter
1/3 cup sugar
1/2 tsp vanilla extract
In a saucepan, bring the milk and sugar, baking soda to a boil over medium heat.Then reduce the heat to low, add the butter and stirring often . Cook until evaporated and thickens. Remove the saucepan from heat and let it cool.
Combine the butter and almond ,biscuits
Press into base of cake pan and place in the refrigerator.
Add condensed milk in the milk mixture.
Add the cream cheese and whipped cream , white chocolate, vanilla in the mixture.
Pour the mixture in a cake pan and place the refrigerator. Let it thickness.
Place strawberry, sugar, lemon juice , water in a saucepan and cook. Add the corn starch and cook .
Cook until thickens, and let it cool.
