Bulgur salad is a traditional Turkish food and this Turkish food name is Kısır. Bulgur salad is served sometimes ladies day,sometimes as a side dish and perfect for a summer dish.Also Kısır is a delicious vegetarian meal.
Bulgur is made from wheat that have been cooked, dried and then cracked. Bulgur wheat is a common ingredient in many Mediterranean cuisine. Bulgur is a good source of protein , high in fibre, B- vitamins, iron, magnesium.
1.5 cups fine bulgur
1 cup boiling water
1 cup fresh onion, chopped
2 cups Green leaf lettuce, chopped
1/2 cup fresh green pepper, chopped
1/2 fresh parsley, chopped
1 tbsp tomato paste
1 tsp hot pepper paste , 1tsp sweet pepper paste
FOR POMEGRANATE SAUCE INGREDIENTS
4 tbsp fresh lemon juice
4 tbsp olive oil
3 tbsp pomegranate molasses
Sea salt , red pepper flakes, black pepper to taste
Mix lemon juice, olive oil and pomegranate molasses In a little bowl , set aside.
1- Place the bulgur in a large bowl and add boiling water.
2- Cover the bowl and set aside for 15-20 minutes for the bulgur absorb all the water.
3- Fluff the bulgur with fingertips or a fork. Add pepper paste and tomato paste, Combine pepper paste and tomato paste with bulgur.
4- Mix green pepper,green onion, parsley and lettuce with the bulgur. Pour the pomegranate sauce into the bulgur salad. Season with salt, peppers to taste. Cover and place refrigerate for at least 20 minutes.
Serve with tomato, cucumber, green leaf lettuce and pickles.
Pour the boiled water and cover ,set aside for 15-20 minutes.
Add the tomato paste, pepper paste, lettuce, parsley.
Pour the pomegranate sauce, add salt, peppers.
