ARTICHOKE HEARTS WITH VEGETABLE IN OLIVE OIL

Feel like a cooking star when you easy cooking this deliciously Turkish style Artichoke heart with Olive oil. Fresh Artichoke hearts are very delicious and easy to prepare. I hope enjoy!

Artichokes contain vitamin A, vitamin C, folic acid, niacin, manganese, and potassium. Artichokes are a good source of magnesium, dietary fiber and minerals. Fresh artichoke contains no cholesterol and fats.

INGREDIENTS

3 artichoke hearts, Cut a thin slice from the bottom of each artichoke bottom so a hollow for filling, placed a bowl and poured cold water , covered, added 2 tbsp lemon juice set aside.

1 medium potato, peeled, cut tiny size

1 medium carrot, peeled, cut tiny size

½ cup peas, frozen

3 tbsp fresh lemon juice

1 tbsp all-purpose flour

3 tbsp olive oil

2 tsp sugar

Sea salt to taste

3 cup water

DIRECTIONS

1-    Heat the olive oil in a medium saucepan over low heat and add the flour, Stir and fry it until changes color-yellow. Pour the water and combine them well. Add 3 tbsp lemon juice, sprinkle the sugar and 1tsp sea salt. Bring to simmer and set aside.

2-    Meanwhile place the carrot, potato, and peas in a bowl, combine them, sprinkle one pinch sea salt, to taste, set aside.

3-    Remove the artichoke from the water and Spoon about 1-2 tbsp of the filling into each artichoke bottom.

4-    Place the stuffed artichoke in to the medium saucepan and covered with a lid, cook them over low heat about 20-25 minutes or until artichokes are tender, If reduced the water add a little water. Serve warm or cold.

  1. Oh YUM! Artichoke hearts are one of my favorite ingredients, a real treat to enjoy, since I have such a hard time cleaning the darned things. I would eat them every day if it wasn’t for all the prep work. 😉 Your delightful recipe is a good reminder that it’s always worth the extra effort though.
