Sometimes you just need to eat zucchini. Zucchini is a health thing. It is at the front of our minds when comes summer, zucchini is a light and healthy food for summer meals. This is tasty way to use up zucchini. Zucchini hollow out and filled minced beef, rice and fresh herbs.Enjoy!
The zucchini also called courgette. It has lots of vitamins. Zucchini is a rich source of antioxidants, vitamin A and C ,dietary fiber.Vitamin A which is beneficial for eye healthy .Vitamin B complex in zucchini benefits diabetics. Also rich levels of fiber in zucchini benefit is for the digestive track ,bowels and a low calorie content, It is helps in weight management.
4 medium Zucchini, washed, cut into 3 pieces(cut into 5-6cm long sections) and to scoop out the seeds in the centre (use a knife or a corer). Optional-Fried in 3 tbsp olive oil over the high heat and let it cool over a paper towel.
1 small size onion, chopped finely
2 tbsp olive oil,
½ tbsp butter
1/2 tbsp tomato paste
2 cup and ½ cup water
FOR THE FILING INGREDIENTS
100-125gr. Minced beef
½ cup rice, washed and drained
1 medium onion, chopped finely
1 tbsp olive oil
1 tbsp water
½ tbsp tomato paste
½ red pepper paste
¼ tsp red pepper flakes
1/8 tbsp black pepper, ground
1 tsp sea salt
¼ cup chopped parsley
1/8 cup chopped mint
1/8 cup chopped dill optional
Place all the filling ingredients in a medium bowl and mix them together and then set aside it.
1- Stuff into the zucchini with the mixed filling ingredients. and set aside. Fry the chopped onion with 2 tbsp olive oil and 1/2 tbsp butter. Add the ½ tbsp tomato paste, ½ tsp red pepper flakes in it.
2- Place the filled zucchini over the fried onion ,stand the zucchini up like column.
3- Pour the water over the zucchini , add the sea salt to taste.
4- Cook about 20-30 minutes or until tender the zucchini,rice and then serve it warm.
Cut it into 3 pieces and to scoop out the seeds in the centre.
Place the minced meat, rice, chopped onion, parsley, chopped mint in a bowl.
Add the red pepper flakes,black pepper,tomato paste,red pepper pasta in it, add sea salt to taste it.
Fry the zucchini in a pan with 2-3 tbsp olive oil.
Stuff the zucchini with the filling ingredient.
Fry the onion in a saucepan and then add the tomato paste, place the zucchini in the saucepan, pour the water in the saucepan and cook until the stuffed zucchini is tender.
