This is our favorite summer salads, it is very simple to make. Purslane salad is absolutely tasty, refreshing, crisp and the salad takes only a few minutes to prepare. It is an excellent summer salad and it is healthy, low calorie salad.
Purslane contains important vitamins, including A, C ,E and minerals including magnesium, calcium, potassium and iron. Purslane has been used as a vegetable source of omega -3 fatty acids.Purslane leaves have more omega -3 fatty acids than in some of the fish oils.
2 cup thickened plain yogurt (Turkish yogurt or Greek yogurt)
1 bunch of Purslane, washed well, dried, plucked out (remove the thick stems), chopped.
1-2 cloves garlic, mashed
2 tbsp mayonnaise
½ cup walnut, chopped
1- Mix the yogurt with a little cold water in a big bowl and add the garlic.
2- Add the purslane and gently stir to coat the purslane with the yogurt , then add the mayonnaise, mix them.Transfer to a serving bowl and sprinkle the walnut onto the Purslane salad.
3- Serve or keep refrigeration till serving time.
