Salad Olivier , otherwise known as Russian Salad is a traditional salad dish from Russian cuisine, which is also popular in many other countries. This potato and vegetable salad is great for side dish for any meat or seafood dish.
5 medium size potatoes
1 carrot, diced
½ cup frozen peas
¼ cup frozen corn
3 small cornichons (dili pickles)
2 eggs, hard-boiled and chopped just egg white
1 cup and 1/2cup mayonnaise
1tsp Dijon mustard
1 tsp lemon juice
Sea salt and black pepper to taste
Boiled sausage or cooked lobster( optional)
1- Place the potatoes in a big pan and pour the water onto potatoes until covered the potatoes. Boil the potatoes in skin( it helps to keep vitamins) and drain , cool for a few minutes, peel the potatoes and diced, set aside.
2- Boil the carrots, frozen corn, frozen peas in a little pan of boiling water. Drain and cool.
3= Place diced potatoes, cooked peas, corn, carrot, diced cornichons, diced egg’s white in a big bowl. Combine the mayonnaise, mustard, lemon juice in a bowl and add into the cooked ingredients, mix well and sprinkle sea salt, black pepper to taste. Transfer to a serve glass bowl and serve.
Boil the potatoes until tender
Boil the carrot,peas, corn
Chop the potatoes, pickled cucumber, eggs.
Add the mixed mayonnaise
Coat the cooked ingredients with the mayonnaise
