It takes about 20 minutes to prepare and just over 20 minutes to cook , Stuffed peppers make a cheap and easy family meal that can be ready in minutes. Fill them with your choice of mince-rice or green lentil-rice. Perfect and tasty dish for lunch or dinner.It makes colorful presentation.
6-8 small bell green pepper or red bell pepper, Washed and cut of the top , remove the cores and seeds set aside.Fry bell peppers in a pan with 1 tbsp olive oil.
1 small onion, chopped finely
2 tbsp olive oil
½ tbsp butter
1/2 tbsp tomato paste
2 cup and ½ cup water for cooking
FOR THE FILING INGREDIENTS
100-125gr. Minced beef
½ cup rice, washed and drained
1 medium onion, chopped finely
1 tbsp olive oil
1 tbsp water
½ tbsp tomato paste
½ tbsp red pepper paste
¼ tsp red pepper flakes
1/8 tbsp black pepper, ground
1 tsp sea salt
¼ cup chopped parsley
1 tbsp chopped fresh mint or 1 tsp dried mint
Place all the filling ingredients in a medium bowl and mix them together and then set aside it.
FOR YOGURT SAUCE INGREDIENTS
1 cup thick Turkish style yogurt or Greek yogurt. 1 clove minced garlic.Sea salt to taste. Mix the yogurt and garlic in a small bowl, add the salt to taste and set aside it.
1- Stuff into the bell pepper with the mixed filling ingredients and set aside. Meanwhile fry the chopped little onion in a medium stewpot with 2 tbsp olive oil and 1 tbsp butter. Add the ½ tbsp tomato paste.
2- Place the filled bell pepper in the stewpot. (the bell peppers up like column.) Pour the water over the bell pepper, add the sea salt to taste and Cook about 20-30 minutes over the medium heat.
3- Remove it from the heat and serve it warm with the yogurt sauce.
Remove the cores and seeds.
Mix minced beef, rice, tomato paste, herbs,salt, red pepper flakes, ground black pepper, olive oil.
Place stuffed pepper in the prepared stewpot and pour the water then cook it.
