Smoky flavour eggplant salad is a charming, tasty and healthy side dish. This low calorie side dish recipe can be an alternative to the regular salad or chips.This is a Turkish style Eggplant Salad and is traditionally eaten as a cold starter but I also like to serve it as a side dish or a dip. There are many different types of Eggplant but most of them use the same basic ingredients. Enjoy! 🙂


4 medium eggplant

1 canned red pepper, chopped

½ cup parsley, chopped

5-6 bunch spring onion, chopped

2 medium fresh green pepper, chopped

1 medium red onion, peeled and chopped


2 tbsp olive oil

2 tbsp fresh lemon juice

2 cloves garlic, minced

1 tbsp vinegar

1 tsp red pepper flakes

Sea salt to taste

The olive oil, lemon juice, vinegar, garlic, pepper flakes in a little bowl and mix them, set aside it.


1-Place the eggplants directly on a grill or put on a gas burner, turn them over every few minutes and cook until all the skin is charred and eggplants inside are very soft. (The eggplants should be black on the outside and soft on the inside.)

3- Let cool and peel the skin and discard the eggplant seeds, cut into long, thin strips, chop the eggplant strips then set aside.

4- Add the green fresh pepper, red onion, canned grilled bell pepper.

5- Add parsley, salad dressing, salt to taste and mix it all up.

6- Put it in the refrigerator for a while marinating and serve with sliced baguette bread for spreading or serve side dish.
