POTATO SALAD

This is traditional Turkish potato salad , it is very easy, delicious and healthy. This is a different take on the usual potato salad and you can change the ingredients to your liking. Potato salad is a wonderful side dish with meat, chicken or fish. I like to prepare this without salt and put it in the fridge so that it is ready to eat the next day (I add salt and pepper when I want to eat it so that it doesn’t get too soggy). Super quick and yummy. Enjoy it!

Fact about Potatoes: Potatoes are a good source of vitamin C and magnesium. Vitamin C can help cold and flu viruses, magnesium helps relaxation and anti-stress mineral. Also, potatoes contain vitamin D, iron, potassium, Vitamin B6, niacin ,dietary fiber. Vitamin B6 which is good news for your heart, in fact a potato a day is good for your heart promoting normal blood-pressure level.
INGREDIENTS

4 medium size potato

2 eggs, hard boiled, cut into bite size pieces

1 medium size red onion, chopped (julienne style)

1cup coarsely chopped parsley

4-5 leaves fresh mint, chopped

4-5 stalks fresh onion, chopped, tiny size

5-6 olives

FOR SALAD DRESSING INGREDIENTS

3tablespoon olive oil

5tablespoon fresh lemon juice

1teaspoon red pepper flakes

¼ teaspoon ground, black pepper

Mix oil, lemon juice, red pepper flakes, black pepper in a small bowl until well blended, set aside.

DIRECTIONS

  • Place the potatoes in a large saucepan, cover with water and bring to a simmer for 20-30 minutes, over a high heat until tender, then drain and cool to room temperature.
  • Peel and cut them into bite-size pieces and place the potatoes in a large bowl. Add chopped fresh and dry onion, parsley, red bell pepper, fresh green pepper, fresh mint, stir to combine.
  • Pour the salad dressing onto the mixed potatoes.
  • When almost ready to serve, add salt to taste and transfer to a serve plate, decorate with olives and serve.

  8. This looks really yummy. I really like that there are green ingredients, too. I didn’t see green bell pepper on the ingredients list, but in the picture, it looks like you used about one large one. Is that correct?

    • Thank you!! It really is a delicious and light recipe! I must’ve missed to mention it but it is really up to you. I love the taste of peppers so I do use them in the salad but as I said it is a personal preference. Thank you for visiting 🙂
