Recently I have cooked a wild duck and it was really tender, juicy and very delicious. Therefore I want to share my recipe with you, I hope you like the recipe and use it.
2kg. or 3kg. whole duck
8-9 cups cold water
1cup fresh orange juice
Fresh mixed herb such as, thyme, mint
1 carrot and 1 potato, washed and peeled
1 slice orange, 1 slice lemon and Salt to taste the duck.
DIRECTIONS AND INGREDIENTS FOR GLAZE:
1 tbsp honey
1/2 tsp grounded black pepper
1/2 tsp red pepper flakes
2 cloves garlic, mashed
1 tsp cornstarch or wheat starch.( Prepared the starch with 1 tbsp cold water.)
A little dried mint
1/2 cup boiled duck liquid.
A little sea salt
Put the honey, the black pepper, red pepper, dried mint, mashed garlic and a little sea salt in a small bowl , add the boiled duck liquid and add the cornstarch. Mix the ingredients until combine well and cook it until a little thickened, set aside it.
1- Remove the innards of the duck, wash it and season the inside of duck with sea salt.
2- Put the duck in a large pot , combine the water and the mixed fresh herbs, sliced orange and lemon, the orange juice, sea salt.
3- Boil your duck about up to 1 hour or until cooked well. Or if you have a Pressure Cooker you can use it, because the pressure cooker cooks the duck within 30-40 minutes. I cooked the duck in the pressure cooker.
4-After boiled the duck, transfer it from the pot to your baking tray and let it cool.Then pour your mixed honey glaze over the cooled duck.
5- Put the duck in preheat oven-300C.degrees and roast it 20-30 minutes or until golden brown it.
6- Serve it with grilled vegetable or whatever you like.
