SPINACH & BROCCOLI FRITTATA

This vegetable frittata recipe is easy and time saving recipe for the breakfast or dinner. Spinach-Broccoli frittata recipe is healthy recipe for everyone and vegetarians. This recipe is like standard spinach, broccoli quiche recipe but I skipped the crust. It is delicious, light, it goes well with roasted potato. Enjoy it!

Spinach-Broccoli Frittata

INGREDIENTS :

4 organic eggs

2 small cloves garlic.

1/2 cup milk

1/2 teaspoon sea salt to taste.

Freshly grounded pepper to taste 1 cup grated cheddar cheese,

1 tablespoon Olive oil,

1/2 table spoon butter.

1 medium yellow onion chopped.

1/ 3 cup water.

2 cup thinly sliced broccoli florets, steamed about 2 minutes.

2 cups organic spinach, roughly chopped

1/3 cup parsley, chopped

Fry chopped onion with olive oil in your fry-pan.
Wash, dry and chop the spinach.
Wash, cut and boil the broccoli until half-cooked.
Add spinach and broccoli in your fry-pan.
Add the beaten egg onto broccoli and spinach.
Add grated cheddar cheese on the egg and vegetables.
Bake your frittata about 2-3 minutes or until cooked.

INSTRUCTIONS:

1- Preheat The oven to 270C . In a large bowl, whisk eggs and milk, add black pepper, salt. Add about half of the cheese, reserving the other half for later.

2- In a large oven-safe sauté pan warm the olive oil and add the onion , sprinkle a little salt. Cook, stirring frequently until the onion is tender and translucent, about 2-3 minutes, add the minced garlic and stir.

3- Add the steamed broccoli and the spinach. Cook, stirring constantly until the spinach has wilted about 30-40 seconds.

4- Arrange the mixture in en even layer across the sauté pan. Whisk the the egg mixture the last time and pour it into the pan, sprinkle the remain cheese onto the frittata. Put the pan in the oven, bake it until set and golden yellow about 5-6 minutes. ( Careful it is hot!) Slice the frittata 6 or 8 smaller wedges. Serve immediately, enjoy it!

NOTES: You can omit broccoli and spinach and substitute your greens of choice.
