This is my favourite summer recipe, I look forward to making and eating these tasty fritters every summer. These deep fried zuccini flowers are so tasty and cruncy, ideally served as a starter to chic dinner, If you are looking for something cruncy and differen and elegant recipe, try them . Zuccini fritters-mommy cook for me
  • 8-10 zucchini flower
  • 1 tablespoon chopped fresh red pepper and green pepper.
  • 1 cup freshly grated cheddar cheese.
  • 1 teaspoon chopped dill or mint
  • Black pepper-red pepper flakes to taste.
  • For Batter Ingredients:
  • 1/4 cup plain flour,1/4 cup graham flour, 1 cup mineral water, salt and red flakes to taste. Place the flour and mineral water, salt-pepper in a bowl and mix them well. Set aside.
  • Vegetable oil, for frying.

Stuff the flowers with the mixed cheddar cheese.
Before assemble stuffed zucchini flowers and set aside.
Prepare the batter by the cold mineral water with the mixed flour and add a pinch of salt , pepper flakes to taste.
The mixture should be slightly thicker than a pancake batter. Dip the zucchini flowers , one at a time in the batter, coat well all sides.
Heat up the vegetable oil, when it starts to fizzle, deep fry the zucchini flowers, about a couple of minutes.
Drain the excess oil from your fritters and serve hot.
Serve hot your Zucchini flowers fritters.


1- Prepare the zucchini flowers by inspecting each flower for dirt, or bugs (little critters do like to hide inside them). Remove the pistil from inside each flower. I also like to remove the little green spikes from around the stem of the flowers.

2- Put in the chopped fresh pepper in a bowl add the grated cheddar cheese, and salt, balack pepper-red pepper flakes to taste. Use a fork to gently beat the ingredients together. In a separate bowl, whisk together the plain flour, graham flour, the mineral water. Add salt, the pepper flakes to taste and stir to combine. The mixture should be slightly thicker than a pancake batter. If needed, add in a bit more mineral water. Stuff your blossom with the mixed cheese and set aside.

3-Pour enough vegetable oil into a medium skillet to coat the bottom by about a 1/4, heat over medium high heat. Coat your stuffed zucchine flowers with the battered and drop into the hot oil. Use the back of a spoon to flatten each fritter slightly. Cook until golden brown, about 2 minutes. Flip the fritter over, and brown the other side. Transfer to a paper towel lined plate. Serve while hot. Enjoy it!
