WATERMELON SALAD WITH PURSLANE
Refreshing watermelon salad with purslane is perfect with minimal ingredients making it pretty easy also Watermelon and purslane have many health benefit.
Watermelon is a summer fruit that consist of 95% water and it has high vitamin such as vitamin A, B6 and C as well as lycopene, amino acids and antioxidants. Watermelon is fat-free and it contains very low sodium.
Purslane is a green, leaf vegetable that can be eaten raw or cooked. Purslane has been used as vegetable source of omega-3 fatty acids. Omega-3 fatty acids are important fats that the body cannot produce. Therefore, we must get them from the diet. Besides, Purslane is a natural remedy for insomnia, high in vitamin A-C , iron and magnesium. Magnesium has a close connection with sleep.

3 cup watermelon, cubed
1 medium size cucumber, peeled cubed
1-2 tablespoon feta or Turkish white cheese.
2 cup purslane, washed and dried, chopped
1/4 cup fresh mint roughly chopped
1 small carrot, peeled and cut to length
Sea salt, freshly ground black pepper to taste
1 tablespoon lemon juice, ( or you can alternatively use a red wine vinegar-balsamic vinegar)
1 teaspoon olive oil
1- Assemble watermelon salad ingredients and cube your watermelon into bite-size chunks. in a bowl, combine watermelon, purslane, fresh mint, cucumber, sprinkle feta cheese .
2- Drizzle the lemon juice and the olive oil, add salt and pepper right before serving. garnish with the carrot.
