
Preparation: 40 minutes

INGREDIENTS:
125 g (1 cup) plain (all-purpose ) flour
70 g unsalted butter or vegetable margarine
4 eggs, at room temperature
1 cup water
INGREDIENTS FOR FILLING:
2 tablespoons instant coffee granules
450 g mascarpone cheese
2-3 table spoons icing sugar( confectioners sugar)
To make the filling, dissolve the coffee in 1 tablespoon boiling water and set aside to cool. Combine the coffee, mascarpone and icing sugar. (Be careful, not much mixed- or mixture will separate)
Ingredients for Dark Chocolate Sauce:
150g (1/2 cup) dark chocolate
25-30g unsalted butter
80-90 g (1/2 cup) cream
To make the chocolate sauce; put the chocolate butter and cream in a small heatproof bowl set over a pan of simmering water. Mix well then set aside to cool slightly.
METHOD:
1-Preheat the oven to 200C. Lightly grease two baking trays.
2-Sift the flour into a small bowl. Put the water in a medium saucepan and put the butter into the water, add a pinch of sea salt and bring to the boil.
3-Stir occasionally and then quickly pour the flour into the boiling mixture. Reduce the heat to low and beat vigorously until the mixture leaves the side of the pan and forms a smooth ball.
4-Transfer to a bowl and set aside to cool, after cooled it, use electric beaters or use your fingers and beat in the eggs, one at a time, until the mixture is thick and glossy.
5-Using two spoons, gently drop 16 rounded balls of the mixture about 3 cm in diameter 3 cm apart each other onto the baking trays. Bake for 15-20 minutes or until the balls are puffed. Reduce the heat to 180C., and bake for 6-8 minutes or until the puffs are golden brown and crispy. ( if you want to eat them sometime later you can gently slit the puffs by using a sharp knife to allow steam to escape. Return to the oven for 6-8 minutes, or until the insides are dry.)
6- Let them cool and just before serving, cut the profiteroles in half and sandwich together with the filling, drizzle the chocolate sauce or if you desire you can sprinkle a tablespoon icing-sugar on top of profiteroles for decorating and serve it.
