Salmon Baked in Parchment Paper.

If you are looking for an easy, delicious and health meal, this parchment baked Salmond is the perfect recipe. Salmond and vegetables are cooked together in a parchment paper pouch creating an almost mess free lunch or dinner that is not only easy, but delicious and it is ready in just thirty minutes.

Time: about 30 minutes


4 Salmond fillets about 160g. each

1 large carrots, cut into slim batons.

1 large potato, peel and cut, thin slices

1 tablespoon lemon juice

salt and black pepper to taste

2-3 mint leaves

4-5 cherry tomato-cut cherry tomatoes in half and 4-5 olive-pit the olives.


1-Preheat the oven to 200C. Cut four large sheets of baking parchment, about 35cm square. Divide the vegetable among them and top each Salmond fillet. Scatter a few mint leaves and a little lemon juice over each, then season the fish with a little sea salt and pepper.

2-Fold the paper in half and double fold all round to seal in the fish. Put the parcels on two baking sheets and bake for 15-20 minutes, depending on the thickness of the fish, potatoes, serve in their paper with some steamed new potatoes, carrots.
