WALNUT AND DRIED FRUIT BARS
INGREDIENTS
100g broken pieces shredded wheat biscuits
115g chopped dried figs
50g sultana seedless raisins
50g walnut halves, coarsely chopped
90g honey
60g unsalted butter
250g dark chocolate, chopped
1 teaspoon orange zest
METHOD
Cover the cake tray (18 cm square cake tray) with baking paper.
1- Combine the biscuits, fig , raisins and walnuts. Place the chocolate and butter in a small saucepan over low heat.
2- Stir frequently, until the chocolate and butter have melted and mixture is smooth. Turn off the heat and add the honey. Add fruit mixture, orange zest and biscuits and mix well, spoon it into the baking tray. Tap the baking tray gently on the kitchen counter to settle the mixture.
3- Cover with plastic wrap and place in the fridge for 2 hour or until firm. Remove from the tin and cut into 2.5 x6 cm bars and serve it. Enjoy it!
