This ashure pudding is cooked with orange and its smell is very rich and so delicious .
2 cup white beans ( Soaked overnight and boiled , drained .)
2 cup wheat ( Soaked overnight and boiled .)
1 cup chick peas ( Soaked overnight and boiled , drained )
150 gr, apricot , Washed , diced
150 gr. fig , chopped , soaked in warm water for 30 minutes and drained .
1/2 cup fresh orange juice
1 medium orange , diced
1 cup and 1/2 sultana , Washed , drained
1 medium quince, peel and chop, it is optional.
2 cup and 1/2 cup sugar
3 tbsp corn starch , Mixed with 6 tbsp cold water
12 cup hot water
FOR DECORATE INGREDIENTS :
1 cup chopped pistachio
1 cup walnut , if desire chop
1 cup peeled almond
1 cup pomegranate
1- Place the beans , wheat , chick peas in a large saucepan and add the water . Simmer over the medium heat about 40-50 minutes , stirring occasionally , then add the appricot , orange , sultana . Cook about 30-40 minutes . Add the orange juice and orange peel , stirring constantly . Add the sugar then add the fig.
2- Finally pour the mixed corn starch and mix .
3- Simmer until the mixtures thickens and the fruit is tender about 20 minutes . Then reduce the heat and cook about 10 minutes . If reduce the Ashure water add a little more boiled water.
4- Pour the pudding into individual serving bowls . Allow the pudding to cool , then decorate with the pistachio , Walnut , peeled almond , pomegranate and Serve it.
Boil the soaked white beans and chick peas and wheat in a separate sauce pan .
Strain the boiled wheat,chick peas, white bean and set aside.
Chop the apricot,fig,orange and prepare orange juice, corn starch, sugar, sultana, set aside them.
Place the wheat, chick peas, white beans in a large saucepan and pour the water,simmer them.
Add the sultana, apricot,orange and cook.
Add the sugar .
Add the chopped fig.
Add the mixed corn-starch and cook.
Decore with the pomegranate, walnut, pistachio, almond.
