If you like vegetable and you want to consume healthy food, this vegetable recipe is good for you also the recipe has low calories and it can be a light dinner. The recipe is not take time too much and it is very tasty food. Enjoy it!
3 courgettes (zucchini) thickly sliced
250-300g. cauliflower florets-about1/2 a head
1/2 tablespoon tomato paste
1 chili pepper seeded and sliced
1 cup , chickpeas -Can chickpeas, drained and rinsed
1 onion, peeled diced
2 cloves garlic, peeled crushed
150-200g spinach leaves
Juice of 1/2 lemon
3 tablespoon olive oil
Black pepper, red pepper flakes, sea salt to taste
1-Heat the oil in a large pan, add the onion, sprinkle a pinch of sea salt and fry until the onion has softened, add the courgettes, cauliflower and fry for 2 minutes then add the garlic, fry about one minute, and stir the tomato paste plus 1 cup water and chickpeas.
2- Add the one tablespoon the lemon juice. Bring to the boil, cover with a lid and simmer about 10-15 minutes.
3-Just before serving add the spinach into the vegetables, give it a stir then season to taste and remove from the heat once the spinach leaves have just wilted. Serve with warm or cold.
