FRESH GREEN BEAN WITH EGG

This Fresh green beans recipe will show you how easy it is to combine with egg. Fresh green beans are better for simple weekday dinner in these summer days. It is a healthy, fast, easy dish for lunch or dinner or it can be a flavorful side dish.If you want more option for your beans, try this recipe, they are an excellent side dish with savory taste and everyone will have ask you for second plate.

Green bean is a good source of protein, Vitamin A, Vitamin B6, Vitamin C, Vitamin K, thiamin, riboflavin, calcium, Iron, Magnesium, Potassium and Copper.

                                                  INGREDIENTS

500-700 gr. fresh green beans, trimmed and cut 2cm length, washed-drained.

1 onion, peeled, diced

1 red bell pepper, chopped.

2 cloves garlic, finely chopped

2 tbsp olive oil

1 tbsp butter

3 eggs, mixed in a bowl

Red pepper flakes

Sea salt to tast

DIRECTIONS

1-Simmer fresh green beans in a big saucepan boiling water for 15-20 minutes or until tender and then strain with a strainer.

2- Meanwhile sauté onion,red bell pepper with olive oil in a big sauce pan, add one pinch salt, chopped garlic and the butter.

3- Add drained beans in the saucepan and cook until bean’s liquid is nearly evaporated and then pour the eggs in the saucepan, stir occasionally. Sprinkle sea salt to taste .When eggs are cooked turn heat off.

5- Place on a serving plate, sprinkle red pepper flakes, serve hot with the yogurt.
