I prepared a salad for side dish, It is delicious, easy to prepare and healthy. I used red kidney bean with bean sprout together and roasted-canned red bell pepper. My version is dressed with olive oil, lemon juice and garlic that perfectly complements the natural flavours of the beans, bean sprouts, red pepper and corn. This Red Kidney Bean with Bean Sprout salad recipe makes a excellent low calorie side dish for lunch or dinner.
Red peppers are an excellent source of Vitamin C. Red kidney bean and bean sprouts have protein, B vitamins (especially folic acid and vitamin B1), Calcium, Iron and fiber. Soluble fiber can significantly lower cholesterol levels and blood sugar. Corn contains B vitamins,folate Vitamin C, protein, fiber and It is also contains plenty of carbohydrates.
400 gr. Canned red kidney beans, drained and rinsed or ( traditionally, red kidney beans are soaked in water the night before and cook until tender the nex day).
200 gr. Canned bean sprouts, drained and rinsed. ( if you use, fresh bean sprouts, wash and boil over high heat for 1- 2 minutes and rinse in cold water, strain.)
2 medium size canned- roasted red peppers, drained, cut
½ cup frozen corn, boiled for 1-2 minutes, drained.
5-6 branch fresh onion, chopped
FOR SALAD DRESSING INGREDIENTS
3 tbsp olive oil
1 tbsp vinegar
3 tbsp fresh lemon juice
2 cloves garlic, minced
1 tsp sea salt
½ tsp red pepper flakes
¼ tsp black pepper, ground
Place the olive oil, vinegar, lemon juice, garlic, salt, red pepper flakes, black pepper in a little bowl, stir and set aside.
1- Place the red kidney beans, chopped red roasted pepper, bean sprouts, corn, chopped fresh onion in a large bowl.
2- Pour the dressing over the salad and stir. Chill until you are ready serve it.
Dressing ingredients= Olive oil, lemon juice,vinegar, garlic.
Cut roasted canned red bell pepper in stripe shape.
Place the bean, bean sprout, corn in a big bowl.
Add the red bell pepper, fresh onion in it and pour the dressing over the salad.
